Turmeric Egg Cauliflower Breakfast
(This dish takes about 10-15 minutes to prepare, and works well for breakfast, lunch, and dinner. *Eggs are an excellent source of protein for muscle growth.)
First Chop up half a red onion. Cut 2 cups of cauliflower into bite sized pieces.
Second Add 2 teaspoons of coconut oil to your pan and set the stovetop to medium heat. Toss in the chopped onions and cauliflower. Cook and stir until the cauliflower starts to turn brown and soft.
Third Squeeze lime over everything. (This will allow your powders to stick.) Add 1 teaspoon turmeric powder and 1 teaspoon minced ginger. (If you like it spicy, then also try adding a pinch of cayenne pepper.)
Fourth Spread the food out to the edges to clear the middle of the pan. Add additional coconut oil as needed* to the center to avoid sticking. (*A little goes a long way) Crack 2 eggs in the center of the pan. Lower the heat and place a lid on the pan. Cook the eggs to your liking, but be mindful not to overcook your veggies in the process.
Fifth When the eggs are cooked, serve and enjoy!
(Extra: For extra flavor, you can add more turmeric powder on top of the eggs, salt and pepper, and some cilantro.)
