The Simple & Quick, Amusingly Good – Eggs In Clouds

Ingredients:

  • 4 eggs
  • 1/4 cup grated pecorino-romano
  • 1/4 cup chopped chives
  • 1/4 cup crumbled bacon
  • Pepper

 

 

 

Directions- The Short Version

Separate egg yolks and whites, putting the whites in a large bowl and saving the yolks
Whisk the whites
Carefully fold in the cheese, chives and bacon
Spoon out the egg whites on to baking sheet
Make a deep well in the center of each with the back of a spoon
Bake at 450 degrees F for 3 minutes and remove from oven
Add yolks to whites
Return to oven and bake until yolks set, about 2-3 minutes for a soft egg yolk

A pet peeve of mine is when recipes never start with turning on the over.  Turn on your oven to 450 degrees F.

 

I personally like to grow all of my chives.  They are so easy to maintain, and will grow in any window and a glass of water.  When you get done cutting up the chives you will grate the cheese into a small bowl. Set these two aside for the time being.

 

Bacon is a favorite, but if you are in a pinch you can cut up some deli thick ham.  Going with the original, cut up cooked bacon into small pieces that will blend evenly into the whites.  You may be asking “Why all the prep work”, but these eggs will be fluffy golden clouds in no time and I like to use that oven time to be hiding all of the dirty dishes.

 

Separate the egg whites from the yolks, leaving the yolks in a small bowl.  Whisk the egg whites in a small bowl, whisk_eggs_whitesuse a hand turner, or if lazy get out that blender and air away (slowly, you want lots of air in the yolks).

 

Once whisked and the white are nice and fluffy, start folding in your chives, pepper, and cheese.
Once thoroughly mixed apply to a baking sheet in even scoops, or if making for a larger group I leave in a large spread.  Using a spoon makes holders for each yolk.

 

Place this in the over for 3 minutes, remove, add in the yolks.  Bake for a remaining 3, or until yolks are solid.
