Summer Fresh Cranberry Salad
A great cranberry salad to accompany the nice warm sunny summer days. This salad takes about 15 minutes to make and is perfect for picnics or parties with friends.
Step 1, put ¼ cup of cranberries into a pot along with ½ a cup of water and 1 spoon of sugar. Slowly cook everything over a stove while stirring until you have a nice thick jam texture, then let it thoroughly cool down to room temperature or cooler.
Step 2, pour the cranberry sauce from the first step into a blender along with ½ a cup of olive oil, 3 tbsp of vinegar, ¼ tbsp of garlic powder and a few tbsp of water to make it smoother. Blend it all.
Step 3, grab a salad bowl and mix all these ingredients: Spring mix lettuce, feta cheese, raspberries, diced tomato, diced celery, shredded carrots, cubed avocado and walnuts. You can take out certain ingredients if you’d like and it will still taste delicious.
Step 4, pour your cranberry sauce over the salad and mix.
Extra Step, If you want some protein in the salad you can cook some chicken to add to the salad.
This is a great salad since you get so many various vitamins and nutrients in one place. All your green vegetables, your fruits, calcium from the cheese, healthy fats from the avocado and walnuts and protein from the chicken. This is a very filling salad but you won’t want to stop eating it after your first taste!
